GRANA PADANO AFTER - BETWEEN TASTE AND WELLBEING
There is no other cheese classification that can use the term “grana”. And it is for this reason that the name of this Italian cheese should always be pronounced in full:
Granada Padano.
The Consortium for the Protection of Grana Padano Cheese (CTFGP) includes 127 manufacturing companies with 142 producing dairies and 148 maturing factories. 200 companies are also authorised to package Grana Padano in portions and grate it. 19 companies are authorised to use the PDO in processed and transformed composite products (CET). The Consortium is based in San Martino della Battaglia, a town in the Desenzano del Garda area, in the province of Brescia; it is therefore located in the heart of the Grana Padano cheese production area, which extends along the entire Po Valley and includes 34 provinces from Piedmont to Veneto, from the province of Trento to that of Piacenza; actual production is currently concentrated in 13 provinces.
